We speak to Edmund Weil, the man behind the award-winning Swift, Oriole and Night Jar, to see how they have adapted during the Covid-19 pandemic.
Our new video series, Behind the Bar, launches with Edmund Weil: co-owner of the award-winning Night Jar and Oriole (with wife Rosie Stimpson) and Swift Bars (co-owned with Rosie Stimpson, Mia Johansson and Bobby Hiddleston).
Jen Baernreuther, Director at Speciality Drinks, talks to Weil about how the pandemic affected his bars, and the challenges of opening a new Swift at a time when the future for hospitality looked bleak.
They also discuss the launch of Weil's new at-home cocktail service, Speakeasy at Home, which has kept their business afloat whilst the bars have been closed.
Borne out of necessity, the at-home cocktail drinking scene has thrived, but is it here to stay when our beloved bars re-open?
